Also known as- Zingiber officinalis

Introduction

Ginger is the most widely used and available herbal remedy on the planet, with billions of people using it every day as both food and medicine. A tropical perennial growing to a height of two feet, ginger has lance-shaped leaves and bears stalks of white or yellow flowers.

Constituents

1,8-cineole, 6-gingerol, 6-shogaol, 8-shogaol, acetic acid, alpha-linolenic acid, alpha-phellandrene, alpha-pinene, alpha-terpinene, alpha-terpineol, arginine, ascorbic acid, beta-bisolene, beta-carotene, beta-pinene, beta-sitosterol, boron, caffeic acid, camphor, capsaicin, chlorogenic acid, curcumene, gingerols, sesquiphellandrene, zingiberene, resins, starches, fats, proteins.

Parts Used

Dried, peeled rhizome, chopped. Chopped ginger is used to treat "wetter" conditions, such as treating or preventing infections, while powdered ginger is used to treat "drier" conditions, such as allergy, asthma.

Typical Preparations

Teas, tinctures, encapsulations, in herbal formulas, and in cooking. First-time users of ginger tend to use too much. To make ginger tea, simmer 3/4 teaspoon (0.5 to 1.0 grams) of chopped ginger in 1 cup of hot water for five minutes in a closed teapot. To treat asthma, use an alcohol-based tincture rather than a tea.

Precaution

Although there are warning in both Traditional Chinese Medicine and some medical texts about use of ginger during pregnancy, ginger use din moderation, that is 3/4 teaspoon up to three times a day, poses no risk to mother*s or baby*s health. Studies in the late 1990*s found that eating as much as 2 to 3 tablespoons of raw ginger or 5 to 8 tablespoons of dried ginger daily will not stimulate uterine contraction. Excessive use may cause gastro-intestinal upset.

Letter from the Editor Title
Greetings,

Happy October!   One of the prettiest months of the year, with all the beautiful yellow, golds and browns,  Also the spookiest months.

We are still into the months of colds, flu, virus, and influenza, so I have designated this month's herb as Ginger, since it's something most have in their cupboard, it offers many helpers for the family challenges, it's also a wonderful immune builder, and has many wonderful effects.

We are now adding in "Buddha Tea's" and the first two we have brought in are Elderberry and Wild Cherry Bark,  these are great to use during this type of season,  Wild Cherry Bark is great for coughing, and cartarrh which is congestion.  Elderberry is great for influenza, and an immune builder.

Recipe Corner Title
 Easy Ginger Tea Recipe

Makes 1 serving

Ingredients:
    1 or 2 slices of ginger root or 1/4th-1/3 t Ginger powder
    1 cup boiling water
    honey (optional)

Directions:
    Put the ginger root slices directly in a mug. or powder
    Add the boiling water and allow it to steep for 5 to 10 minutes.
    Add honey to taste, if desired.

 Pumpkin Gingerbread Recipe

    Prep time: 15 minutesCook time: 1 hourYield: Makes one loaf

By the way, we made one batch of this pumpkin gingerbread forgetting to
 add the melted butter and you know what? It's still turned out fine. Not as
 moist as the butter version, but still good, and better the next day.
 I still prefer the butter version, but if you are trying to cut back,
 you can leave it out.

Ingredients

    1 1/2 cups (200 g) all purpose flour*
    1/2 teaspoon salt
    1 teaspoon baking soda
    2 teaspoons ground ginger
    1 1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    1 cup (240 ml) pumpkin pur*e (canned or homemade**)
    1/2 cup (1 stick, or 112 g) butter, melted
    1/2 cup dark brown sugar
    1/2 cup (120 ml) molasses
    1 Tbsp finely minced candied or fresh ginger (optional)
    2 eggs, beaten
    3 Tbsp water
    1/2 cup raisins (optional)

* I've also made this pumpkin gingerbread using  gluten-free flour from King Arthur. Turned out great!

                                          


Method

1 Preheat oven and prepare pan: Preheat oven to 350*F (180*C). Prepare a 9x5x3-inch loaf pan with non-stick spray or butter to keep the pumpkin gingerbread from sticking to the pan.
2 Mix dry ingredients: In a medium bowl, vigorously whisk together the flour, salt, baking soda, ginger, cinnamon, and nutmeg.
3 Mix wet ingredients: In another bowl, use a wooden spoon to mix together the pumpkin pur*e, melted butter, sugar, molasses, fresh or candied ginger, eggs, and water.
4 Combine the wet and dry ingredients. Add the raisins if using. Stir only until incorporated.
5 Bake: Place the batter into the prepared loaf pan and bake at 350*F for 50-60 minutes, until a bamboo skewer inserted into the center of the loaf comes out clean.
6 Cool: Remove from oven and let cool in the pan for 10 minutes. Then gently run a knife around the edge of the loaf and invert the loaf to remove it from the pan. Let it cool on a rack completely before slicing.
The loaf's flavor will improve with time. If you cut into it while it is still a bit warm, it may be crumbly. In which case you may want to make your slices with a bread knife.
